Oh nuts, no nuts!

Did I tell you the BFF and I gave up nuts and nut butters for Lent?

Yes? No?  Well whatever, we did.  It’s become a tradition for us.  We actually almost look forward to it – ALMOST.  It’s like 40 days of detox!

Because of this I find myself looking for suitable substitutes.  My biggest issue is probably granola.  I have a specific brand that I ♥

But, alas, it has almonds.  😦

So I’ve been scouring the supermarkets looking for something that meets my 3 criteria:

#1.  No nuts.

#2.  As few ingredients as possible

#3.  Price – I refuse to pay $8 for 12oz of granola!

Low fat/calorie is a bonus.

This has been difficult to find.  Mostly because of #3.  I’m very cheap cost conscious.  So I sucked it up and made my own:

    Cinnamon, ground, 1 tsp 
    Canola Oil, 1 tbsp 
    Applesauce, unsweetened, 2 tbsp 
    Maple Grove Farm Maple Syrup (sugar free), 0.33 cup
    Optimum Nutrition Whey, 100% Gold Standard, Vanilla Ice Cream, 2 scoops
    Quaker Oats – Quick 1 Minute – Dry, 3 cup
    Bob’s Red Mill Flax Seed, 2 tbsp (ground)
    Vanilla Extract, 2 tsp

Preheat your oven to 275 degrees.  Mix all your dry ingredients together and then add in the wet.  If you are using quick oats the mixture will clump.  If you choose to use old-fashioned oats it shouldn’t clump at all.  Bake low and slow for 45 minutes, stirring it every 15-20 minutes until it gets nice and crunchy!

Damn it.

Officer M and the kids all had it and got over it.  I thought we made it through….

I think my good deed of blood donation yesterday may have bit me in the ass.  I was feeling iffy about an hour after donating but brushed it off as a side effect of being a quart low.  I had a Christmas party to go to and decided it was all in my head.  The party was a blast and even though I know you aren’t supposed to drink alcohol, I did imbibe (not a lot).  By the time I got home at 11:30 I had body aches and was shivering. 


And on top of that, Reese woke up from the garage door opener so I had to soothe him back to sleep before I could hit the hay.

Both kids ended up in my bed during the night but I was too tired and achy to care.

This morning’s weather mirrors the way I feel.


I’ve had 5 cups of coff-tea so far today (made with only 1/2 spoonful of coffee), and Protein Packed Oat Bran to get in some protein.  When I’m sick all I want is carbs.

The kids are still in jammies at 2pm.  I took a 20 minute HOT shower and put jammies on.  I also won a Snuggie at the Christmas party last night and it came with these kick ass socks:

At least Officer M has the night off so he can help me with the kids.

I’m so rarely sick that I’m actually annoyed!  Hopefully I’m better by tomorrow….

Double-Shot Friday!

It’s pretty brisk out there today.  Brrrrrr.  What better way to pass the time than to bake -n-blog!!!

Whole Wheat Oatmeal Quick Bread for Officer M: 

And Super Easy Black Bean Brownies for the kiddies (and maybe one for me… 🙂 )

I was going to make my regular recipe, then I saw a box of low sugar brownie mix in the back of the cupboard.  I rinsed down a 15oz can of reduced sodium black beans and used my immersion blender to puree them (adding about 3-4 tbsp of water as I went) and then hand stirred in the mix.  It looks really dry, but trust me, it’ll mix up nice.  Then I scooped them into a mini-muffin tin and baked them at 325 for 15 minutes.

Totally cures my chocolate craving for 76 cals, 1g fat, 16 carbs and 2g protein. 

The best part of all this baking:

I didn’t have to do the dishes after!!

TGIF huh folks!

FIRST AND FOREMOST!  Exciting news!!  Lauri Watson (author of Red Head Recipes) has been poking around my blog!  I see her as a celeb-blogger.  She has a fantastic site with unbelievable recipes that just call to me – see ‘Squash Tuesday’ post.  As a novice blogger, I think it’s awesome she took the time to leave a message! 


I am in pain this morning.  The good pain though.  The ‘I really pushed myself’ pain.

Ivy and I went to the Y yesterday and did bi’s, tri’s and back followed by a 2 mile jog on their AWESOME treadmills.  I think today will have to be a rest day…..

Today is also going to be a soup day!  I LOVE soup.  I actually miss it in the summer.  Last night I made a huge pot of cabbage and bean soup with the chicken stock from Sunday’s roast chicken lunch.  Just 8 cups of stock, 1 head of shredded cabbage, lots of onion and garlic, canillini (sp?) beans and curry powder.  It made about 10 cups, so I’ll be eating it all week. 

Tonight I’ll be taking the kids to the Rag Shag parade.  It’s so cute.  The kids get dressed in their Halloween costumes and we line up at the town hall.  The police close off a portion of the main street and we walk – parade style- 1/8 of a mile to the looooong drive leading up to the boys and girls club.  There they have games and music and treats.  It’s safe and really geared for the smaller kids who don’t really ‘get’ Halloween yet.

Time to get my butt in gear.  Starting with Protein Oat Bran and granola!

Oh, it’s been broughten!

***I love getting in a good workout first thing in the am!  Makes me feel productive!

Ivy came over this morning to get in some strength training, seeing as we skipped Thursday.

We KILLED the P90X Legs and Back workout, but added in 1 minute incline sprints for some added burn!  BIG props to Ivy, she rocked it this morning!  Check out the definition in her arms:

The numbers weren’t too shabby either:

I don’t like using the P90X videos anymore because there’s too much downtime between moves.  Doing it this way with the sprints keeps my heart rate up more.

After a workout like that, you need recovery fuel.  Enter the protein ‘Candy’ Bar!

Looks like poo, tastes like heaven:

1/3 cup oats

1 heaping tablespoon peanut butter

1/2 scoop protein powder (I use chocolate Syntha6)

1/2 medium (ripe) banana

Throw all into the Magic Bullet, or processor, and give it a good whirl.  Leave it chunky though.   Plop onto wax paper (4 tablespoon sized globs) and freeze.

More Zucchini? Heck Yeah! It’s the wonder vegetable!

I love Oatmeal.   ❤ 😛

I love the taste, texture, nutritional value.  That being said, Oat Bran is totally my dirty mistress!  Almost identical nutritionally (a little more protein tho), but smoother and creamier and nuttier.  MMMMmmmm.  My recent breakfast obsession seeing as I’m out of pumpkin:

Protien Packed Oat Bran

1 c Water

1/3 c Oat Bran

1/3 scoop of Vanilla Protein Powder ( I use Syntha6 Vanilla Milkshake)

2 Egg Whites


1 tsp each Raisins and Slivered Almonds

Bring the water to a slow boil and add oats, stir immediately and continuously for about 30-40 seconds.  Add in egg whites one at a time whisking each one as you add them.  Cook about a minute.  Add in powder and cinnamon (if you like it sweeter – add in some sweetener here) and shut off the heat.  Stir well, top with raisins and almonds.

Carbohydrates: 30.1g
Protein: 25.7g

Ran over to the BFF’s this morning for some quick yoga and back home to feed lunch to the munchkins.  Once Bugga went down for a nap, Peyton and I got cracking!

Reese’s brithday  is tomorrow 🙂 so we are making ZUCCHINI BROWNIES and SPICED ZUCCHINI MUFFINS!!!!


Zucchini Brownies


1/4 c Applesauce, unsweetened

1 tbsp Canola Oil

1tsp Vanilla Extract

1.25c Zucchini, shredded (do not drain the liquid)

1C Whole Wheat Flour

1/2 c Granulated Sugar

1/4 c Brown Sugar, unpacked

1/4 c Cocoa, dry powder, unsweetened

3/4 tsp Baking Soda

pinch Salt

1tbsp Mini Chocolate Chips

Preheat oven to 350.

Mix oil, applesauce, sugars and vanilla in a small bowl.  In a separate bowl, combine flour, cocoa, baking soda, salt and chocolate chips.  Stir wet into dry and fold in zucchini.  Pour into a prepared 8×8 or 9×9 pan and bake 25-30 minutes.

Spiced Zucchini Muffins 


3 Egg Whites 

1/3 c Canola Oil 

1/2 c Applesauce 

3 tsp Vanilla 

1 c Granulated Sugar 

1c Granulated Brown Sugar 

2 c Shredded Zucchini 

2 c Wheat Flour 

1 c Oats 

dash Salt 

1 tsp Baking Powder 

1/4 tsp Baking Soda 

1 tbsp  EACH Cinnamon and Pumpkin Pie Spice (or to taste) 

Preheat Oven to 350. 

In a large bowl beat together eggs, oil, vanilla and sugar.  Fold in zucchini.  Beat in flour, oats, salt, baking powder, baking soda, and spices.   Scoop into prepared muffin tin and bake for 20-22 minutes.

Well, I had good intentions…

I did not cook everything on the list today.  Actually, all I managed to whip up was the pancakes:

A mix of chocolate/pb chip and raisin/walnut….One plate for our house, one for the BFF’s

Have I told you that my 3 1/2 year old is a genius?  Yeah, she can assemble a 63 piece puzzle in like, 20 minutes!

Anyway, so after breakfast I dropped off  Jess’s pancakes (with the kiddies in tow) and ran a few errands.  Around 11,  Jess called and asked if I could help her clean the new house – the builder left a mess, longer story than I’m ready to get into.  Officer M was up when we got home so he grabbed the kids so I could jet over and help the BFF.  I got home about 3 hours later, dirty and tired.   But on the bright side, I got to use her sisters super cool bendy vacuume attachment! 

(I know this sounds weird, but if you read the ‘About’ page on this site you’d know I ❤ to vacuume! :)) 

When Reese got up from his nap we headed to Mom’s.  The kids proceeded to get totally filthy playing with Pop and his  fishing boat.  By the time we got home and cleaned up, Easy was what’s for dinner.  Scrambled eggs with cheese and broccoli and a slice of toast for them and 3 egg whites with the last of the anitpasto on a Flat Out for me. 

Maybe I’ll cook tomorrow.  For now, I’m gonna catch up on some Dora with the little people who live in my house!  Nite! 😛

O Bugga.

Reese woke up at 2:45 am in a panic.  He couldn’t find his blankie (I snuck it out of his room last night to wash it).  Officer M took him downstairs to try to soothe him so I could go back to sleep.  At 4:30 I woke again to SCREECHING!  Officer M was trying to put him back to bed – with a damp blanket now – and he wasn’t havin it!  Now it was my turn to take him downstairs.  

Needless to say I’m exhausted.  I mentioned this to my BFF (who is on maternity leave with her twins) and now I feel whiney and ridiculous…

Ok, so the rest of my day – pretty boring.  Phone duty at the office, laundry, emails, cleaning etc.  I did make lunch however:

Chicken Sausage and Peppers Penne (IN-sanely Easy)

This is my Turbo Cooker (aka Wonder Cooker – because it’s a wonder all the things it can do!)

I chopped up a red pepper, yellow pepper and half a vialia onion.  I threw that in the Wonder Cooker with 1.5 cups of dry pasta and 1.5 cups of water. 

Cover and let it cook on high until the pasta is al dente.  While that was going, I cut up some chicken sausage:


Tossed these in with 1 can of diced tomato of your flavor choice, garlic powder, onion powder (and fresh basil cause I have it) and simmer a few more minutes until the favors meld.


Tonight is kickboxing night (yay!) so I wanted to get all our play-date treats ready for tomorrow and out of the way:

PB Banana Drop Cookies

These are carzy easy to make too.

1.5 c Quick Oats

1/4c Smooth Peanut Butter

2 Rip Bananas (mashed)

Raisins and Chocolate Chips

Mix banana, PB and oats together really well and fold in chocolate chips and raisins. 

Scoop into a little ball using a tablespoon.  I only got 19 this time… :/

Bake ’em at 350 for 12-15 minutes until you see browning.  I like to put them in tupperware in the fridge once they’re cooled off.

Seeing as it’s still ridiculously hot here, I think dinner is going to be a Chocolate Protein Ice Cream.  That and I’m sooooo done cooking today.  Have a great night!


Father’s Day, Part Deux….

First off, I have to tell you about my breakfast!  4 egg whites plain, cooked omelet style, on a Flat Out Light Itialian wrap. 

No biggie right?……Until you put some Cedar’s Roasted Vegetable Hummus on it! 

It’s all-sorts of awesomeness in wrap form!  So simple yet so good-how did I not think to do this earlier?  I know I’ve seen it done…..  Sorry no pic, but you can imagine right?


Exercise today:  2 miles on the treadmill in the form of intervals, followed by chest and back.  20! unassissted pullups (done in sets of 4’s and 5’s but still –  WOOT! WOOT!)

After a shower, I baked up an Applesauce Cake to take to the In-Laws:

Smart Balance, Smart Balance Light Buttery Spread, 1/4c Softened

Egg, fresh, 1 large

Brown Sugar, 1/3 cup, packed

Applesauce, sweetened, 3/4 cup

Whole Wheat Flour, 3/4 cup

Baking Soda, 1 tsp

Baking Powder, .5 tsp

Salt, 1 dash

Pumpkin Pie spice, 1 tsp + Cinnamon if desired

Vanilla, 1 tsp

Apples, fresh, 1 small, diced 

Oats, Dry, 1/3 cup

Golden Raisins (optional)

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×9 inch baking pan.

In a medium bowl, mix together the butter, brown sugar, vanilla and egg until smooth. Stir in applesauce. Combine the flour, oats, baking soda, salt and pumpkin pie spice.  Fold in the diced apple and raisins to the dry ingredients.   Stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.

Bake for 20-22 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.

Calories: 138.4  /  Total Fat: 3.3 g  /  Total Carbs: 29.2 g  /  Dietary Fiber: 2.3 g   /  Protein: 2.5 g


I also decided to make a Greek Yogurt ‘Butterscotch Frosting’ to put on top:

1tbsp Butterscotch Pudding (Jell-o FF/SF)

4 oz Greek Yogurt  (Plain FF)

1/2 C Cool Whip (FF)

Mix all ingredients together until thick.  Chill.   It kinda tastes like cheesecake.

(The ‘frosting’ adds 20 Cals, 1g Sugar, 2g Carbs and 1.5g Protien.)


My MIL made Fried Eggplant and grilled steaks at the request of the men.   While that cooked, the kids played:


Everyone loved the apple cake, and because we have the little ones, we were practically ordered to take home numerous desserts.  Italians.  Need 2 Feed.

 This will more than likely end up in my office kitchen tomorrow…

Dinner will be leftovers of Salmon Salad with Cedar’s Hummus (can’t stop eating it!) and Sweet Potato Falafel.  Hope all you Dads out there had a wonderful day!

Five A.M. was a very unwelcome sight this morning.  I woke up for no reason.  It’s ok though!  With my extra hour and a half I got my biceps and back done, seeing as my workout was interrupted yesterday. 

Today is going to be light on the cooking, we have all these leftovers to get through!  Breakfast was the Best.Breakfast.Ever.   Mine with peanut butter and the kids had syrup on thiers.

Lunch was leftover Mexichicken. 

I had mine over the other half of sweet potato with some crushed FoodShouldTasteGood Multigrain chips on top.  The kids ate the Sweet potato corn cakes with thier chicken as well as steamed broccoli and carrots.

We’re going to 2 playdates tomorrow so Miss Peyton and I made some granola bars while Bugga napped.   I basically looked up a bunch of recipes and threw together the ingredients I had on hand.

First we had a fasion show with our aprons:

Yes.  That is a cow apron.  My MIL gave it to me.  I actually LOVE it and Peyton does too!

Granola Bars


2.5c Oats

1c Whole Wheat Flour

1 tsp Baking Soda

1 tsp Cinnamon

1/4c Golden Raisins

1/4 c Anne’s House Soy Energy Mix (or whatever nuts you like)

1/2c  Applesauce

1/4 c Honey

1tbsp (heaping) Peanut Butter

1 tsp Vanilla

1tbsp Dark Brown Sugar

Mix the dry ingredients with the raisins and nuts in one bowl and the wet ingredients into another.  Pour the dry into the wet.  Spread into a 9×13 pan coated with cooking spray and press with a spatual (also coated with spray).  Bake 20 min at 325 and let cool before cutting.

EDIT:  Try adding an extra tablespoon of PB to hold the bars together better!  They’re really crumbly as is, but that makes it perfect for topping yogurt!
